Northwest matsutake are aromatic, whitish in color, and vary dramatically in size and grade. We are offering only #1 (closed gill) matsutake, in various sizes. Our vendors are famous for getting hold of the highest quality matsutake available, and we guarantee that you won't find any better source. Every source we use supplies restaurants around the Pacific Northwest with high quality specialty mushrooms, and are from the same people chefs at better restaurants rely on.

Where do your Matsutake come from?

The fall microclimates vary around the Northwest enough that, depending on the whims of the season, our matsutake come from Oregon, Washington, British Columbia, northern California, and  sometimes from Alaska.

Is the pricing guaranteed?

Right now, we are confident in our ability to deliver matsutake at the listed price. We will respond to changes in pricing as we learn of them. Sometimes unexpected weather patterns will dramatically alter availability and pricing. If the price changes too dramatically, we may be forced to delay or cancel orders. Should this happen, you will receive notice as soon as we are aware of it.

What type of matsutake will I get?

You will receive #1 grade, closed-gill matsutake. These are the most highly prized and hardest to obtain; some produce markets may even hide them from sight and require you to ask for them specifically before they even tell you they have any. You can select from SS, S, M, L, and LL sizes.

How are they shipped?

Depending on which supplier we use, they will come in a small cardboard box or in shippable styrofoam coolers with ice packs. We recommend choosing FedEx 2 day or faster service, unless you live within 300 miles of Portland. You can get free domestic (US-destined) shipping at the current price, including FedEx 2-day delivery, if you use the code MATSU9.

Can I ship to multiple destinations?

Yes. Our web store software currently doesn't support creating one order with many destinations, but you can create multiple orders, or if you like, you may choose to call us to place your order. For international shipments, if you have any trouble understanding the shipping options, please contact us.

Can I get a discount for shipping more than one pound to the same address?

Yes. The discount may depend on availability and the current week's pricing, so please contact Jason by telephone or email.
